After yesterday's scorcher, today's cooler change feels very refreshing. I am still working on my
crafts but returned to the kitchen to put together a quick salad for lunch. This strawberry and goat cheese salad is genius in its simplicity and makes most of the best quality ingredients available. I used a slightly sharp and matured
goat cheese that balances the sweetness of strawberries and the peppery Asian greens. Drizzled with balsamic and good extra virgin olive oil, this salad is a real winner.
Strawberry and Goat Cheese Salad
mixed greens
fresh strawberries
goat cheese
balsamic vinegar
olive oil
freshly ground black pepper
walnuts, optional
1. Mix greens and sliced strawberries. Add goat cheese and drizzle with balsamic vinegar and olive oil. Season with black pepper. Serve with crusty sourdough.
A wonderful salad! That combination is so great.

Ihanan raikkaan näköinen, en saa vuohenjuustosta ja mansikasta tarpeekseni.. :)
ReplyDeleteBeautiful salad, Maria! Love goat cheese and fruit in a salad. And yours looks brilliant. And no doubt tastes delicious.
ReplyDeleteThat salad looks like a piece of edible art :) ! Beautiful! I'm a late starter in using strawberries in savoury salads, but the more I try the more I like!!
ReplyDeleteSo fresh and vibrant!
ReplyDeleteCan't help but notice a lot of dairy/eggs creeping back into your recipes of late. Are you no longer following a vegan diet?
ReplyDeleteHello Anonymous!
DeleteThat's right! I'm back to eating eggs and dairy and enjoying a more balanced diet again.
Thanks!
Maria
